My 2nd favorite soup !!


This soup saved my life once !! No Joke!!

Favorite Soup Recipe Zuppa Toscana (olive garden)
ZUPPA TOSCANA SOUP RECIPE:Serves 6-8


Ingredients:
1 lb ground Italian Sausage (I use Jimmy Dean hot sausage).
1 1/2 tsp crushed red peppers

1 large diced white onion
4 Tbsp bacon pieces
2 tsp garlic puree
10 cups water
5 cubes of Chicken bouillion
1 cup heavy cream
1 lb sliced Russet potatoes, or about 3 large potatoes .
1/4 bunch of kale

1. Saute sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while prepare other ingredients.

2. In the same pan, saute bacon, onions and garic for about 15 minutes or until onions are soft.

3. Mix together the chicken bouillion and water, then add it to the onions, bacon and garlic. Cook until boiling.

4. Add potatoes and cook unil soft, about 10 minutes.

5. Add heavy cream and cook until thoroughly heated.

6. Stir in the sausage.

7. Add kale just before serving

Delicious! Buon Appeitio!

If this is your second favorite soup what is the first? My husband loves this soup. i don't know how you got the reicpe, but thanks for sharing.

I haven't made it yet, I just stole it off another blog !! My first favorite in my mom's potato soup, it has these egg dumplings which are yummy !! My siblings and I all compete to see who got soup !! We call each other when we discover mom has made the soup, "guess where I am and what I'm eating"?? lol We actually have potato soup parties !! So now you understand the waist line, I live for food and potatoe's at that !!

how did you know I was going to make soup today? The rain brings it out in me! It won't be this one...I have a crowd so we are doing mulligan stew! you will have to remind me how this soup saved your life...I'm sure you've told me, but I'm getting forgetful now too!! :)
